Alongside the Cuba Libre and the Mojito, the Daiquiri is one of the three great Cuban cocktails, and by adding pineapple and spiced syrup it gains texture and taste.
Combine the pineapple juice, rum, lime juice, sugar, and ice in a cocktail shaker and shake to chill. Strain into a stemmed cocktail glass and serve immediately,
Garnish with a lime slice or a pineapple wedge, if desired. (Alternatively, daiquiri may be blended in a blender with the ice for a frozen cocktail.)

Rum, lime and sugar are at the base of the Daiquiri, a match made in heaven, and a natural combination in the Caribbean, where sugar cane is transformed into both sugar and rum. Drinks including these three base ingredients are recorded as early as 1740. Adding strawberries is not quite as old, but the practice is now fully established, and the combination with lime is a perfect match, the zesty citrus edge lifting juicy, tropical pineapple and warming spices.
